Visit Your Local Farmer's Market

I have to share our loot from our local farmer's market. On the menu for this week is kale, eggplant, okra, organic new potatoes, tomatoes, and purple haze carrots. Look how bright and colorful these are! We've already used a couple tomatoes for Cheesy Tomato Basil Toast (recipe to come soon) and eaten one raw purple haze carrot apiece. Aren't the carrots the most beautifully rich color?! They taste like regular carrots, but from the moment Michael spotted them at a booth a couple of weeks ago he hasn't been able to get them out of his head. We took the plunge and bought a bunch. They are really tasty!

I'm going to have to Google recipes for the okra and eggplant since the only way I've ever eaten either of them is fried. They were also Michael's request. I'm so glad he comes with me! He picks out things I probably wouldn't have and helps me step out of my cooking comfort zone. It is so much easier to live a whole food lifestyle with him on board and loving every dish!

I'll post recipes for the okra and eggplant if they end up being a success!
