The Princess and the Three Knights by Karen Kingsbury. If you have girls, this is a love story they need to read. It parodies the love story between God and his daughters as well.
The Tale of Despereaux by Kate DiCamillo. This is a story of honor, courage, love, and redemption. Kate DiCamillo writes in such a soft voice that it is fit for small children even though the lessons she teaches in this book can be learned at any age. I'm actually reading this to my fourth graders now.
The Miraculous Journey of Edward Tulane by Kate DiCamillo. If you or your children have or have had a love affair with a stuffed animal, if your favorite childhood toy was ever real to you, this is a must read.
The Library Lion by Michelle Knudsen. Soft pictures and kid-friendly text make this story easy to read and reminds us that sometimes rules can be broken for the right reasons.

Love all of these books esp the Karen Kingsbury one. She is such a talented writer. I have read all of her adult christian fiction books! :)
